- Boil florets from two heads of broccoli in generously salted water until al dente
- Remove florets from water. I used a spider; alternately you can strain the broccoli into a colander set in a pan--save that cooking liquid!
- Place broccoli in a blender; add cooking liquid until 1/3 of the broccoli are submerged.
- Blend until very smooth. It's best to put a towel over the lid and start with a few gentle pulses so you don't get hot liquid everywhere.
- Season to taste and serve. I topped it with a sprinkling of feta, dried cranberries, and a splash of olive oil. Served with fresh baguettes, it was a feast.
